ingredients
- 3 cups pealed and cut Broccoli florets
- 2 tablespoon unsalted butter
- 1 tablespoons avocado oil
- 3 tablespoons all purpose flour
- 2 cups chicken or vegetable broth
- 1 cup water from broccoli
- 1/2 tsp himalayan salt
Method
Step 1
1) Cook the peeled broccoli without rind for 3-5 minutes in a pot with 1 to 2 cups of water (do not drain the water). Blend the broccoli with 1 cup of the boiling water. (be careful it's hot).
Step 2
2) In a large saucepan melt the butter over medium heat with the oil. Brown the flour in it for 1 minute.
Step 3
3) Add the flour mixture with the oil and butter to the blender. It should not change color, everything is very fast. Once the mixture is liquefied very well, pour into the pot, season with salt, pepper and mix the chicken (or vegetable) broth little by little with a wooden spoon and continue cooking until it boils. (milk is opcional) It should not boil for more than 5 minutes. Lower the heat, cover the pot and cook over low heat until you serve.
Step 4
for the toppings you can use cubed potato chips, crushed pistachios, croutons, sour cream, chopped chives, cheese use the ingredients you love. I had a bagel that I sliced and fried. chiffonade basil and sprinkled multi color quinoa and cheese. I drizzled olive oil. You can place cooked chicken if you want as an option.
