ingredients
Waffle
- 1 cup flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 2 large eggs
- 3 apples

Apple Slices
- 1 apple
- 1/2 teaspoon cinnamon

- 10 ounces double cream
- 1 tablespoon vanilla essence
- 1/2 cup icing sugar
Method
Step 1
First, pre-heat the oven to 140c. Then thinly slice an apple into slices (you could use a mandolin) and place on a baking tray. Bake for 45 minutes turning after 25 minutes. Leave to one side until needed.
Step 2
Now peel and chop your apples. Then place them in a saucepan with a drop of water and stew over a low heat until soft and mushy. Then blend into a puree.
Step 3
Next, make your waffle batter. Combine the flour, baking powder and salt in a bowl and mix. In a new bowl, add the eggs and milk and whisk, then scoop in 2/3rds of the apple puree. Apple is the natural sweetener here and it works wonderfully as a flavour. Combine the wet and the dry ingredients and whisk until lovely and smooth.
Step 4
Now make your cream. Whisk the double cream with the vanilla and sugar until it forms lovely soft peaks.
Step 5
Heat the waffle iron and when to temperature pour in a ladle of batter, cook for around 4 minutes or to a lovely brown crisp colour.
Step 6
Plate up the waffles and top with the cream, left over apple puree and apple slices. ENJOY!
