Matcha Cookie Sandwich

Recipe Card

  • 100 g sliced Butter
  • 200 g Flour
  • 150 g Sugar
  • 15 milliliter fresh Lemon juice
  • 1 teaspoons Matcha tea powder
  • 1 teaspoons Tartar
  • 1 Egg



  • 200 g Mascarpone
  • 100 g Powdered sugar
  • 1 Lemon juice

Make the cookies


  • Step 1

    Mix all the dry ingredients together.

  • Step 2

    Add butter, lemon juice and the egg to the mixture and stir until you have a smooth, homogeneous cookie batter.

  • Step 3

    Let the dough rest in the fridge for a minimum of 30 Min.

  • Step 4

    Preheat the oven to 350° Fahrenheit or 180° Celcius. Scoop the dough on the baking sheet paper and bake the cookies 9-12 Min. – until they get brown on the edges.

  • Step 5

    Let the cookies cool down completely before you spread on the filling.

  • Step 6

    Mix the ingredients for the filling together. Take all cooled-down cookie upside down and scoop a good tablespoon of filling on each.

  • Step 7

    Take two cookies and very carefully put them filling on filling together, wiggle and press them together to make the filling swish out to the edges. Enjoy!
