Sweet Potato Pancakes
When two of your favorite foods collide, you know it’s going to be good. These gluten free sweet potato pancakes are a weekend morning favorite in my house! -@eatwithclarity_

Buy ingredients
Add ingredients directly to your favorite online grocery cart (where available).


  • 11/2 cups rolled oats
  • 1/2 cups mashed sweet potato
  • 1/3 cups plant milk
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 tablespoons maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon pumpkin spice


  • Step 1

    Add oats to a blender or food processor and process until you get a fine flour.

  • Step 2

    Add all remaining ingredients and process until you get a smooth batter.

  • Step 3

    Heat a skillet on medium/low heat and add a touch of oil if necessary.

  • Step 4

    Using 1/3 measuring cup, scoop out the batter onto the pan and cook on both sides for about 1-2 minutes.

  • Step 5

    Repeat until all batter has been used.
