- 11/2 cups rolled oats
- 1/2 cups mashed sweet potato
- 1/3 cups plant milk
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 2 tablespoons maple syrup
- 1/2 teaspoon vanilla extract
- 1 teaspoon pumpkin spice
Add oats to a blender or food processor and process until you get a fine flour.
Add all remaining ingredients and process until you get a smooth batter.
Heat a skillet on medium/low heat and add a touch of oil if necessary.
Using 1/3 measuring cup, scoop out the batter onto the pan and cook on both sides for about 1-2 minutes.
Repeat until all batter has been used.
