Hummus with Roasted Beets

  • 1 small beet
  • 1 can chickpeas
  • 1 lemon
  • 2 cloves garlic
  • 3 tablespoons tahini
  • 1/4 cup olive oil
  • 1 teaspoon sea salt


  • Step 1

    Preheat oven to 375. Wash and dry the beet and wrap in aluminum foil.

  • Step 2

    Place in the oven and bake for about 1 hour or until easily pierced with a fork. Remove from the oven and let cool.

  • Step 3

    Once it is cool enough to handle, peel off the skin (it should come off easily) and chop into chunks. Add to your food processor and pulse until you have very small pieces.

  • Step 4

    Add in all remaining ingredients and process until completely smooth. Taste and adjust seasonings as desired.

  • Step 5

    Transfer to a container and store in the fridge for up to 1 week.
