Preheat over to 350 degrees Fahrenheit.
Combine the ground flax seeds with 2.5 tablespoons of water and set aside.
In a large mixing bowl, add the almond flour, oat flour, baking soda, baking powder, sea salt, and coconut sugar. Stir to combine.
In a separate bowl, peel and mash the bananas with a fork.
To the bowl with the bananas, add the melted coconut oil, apple sauce, apple cider vinegar, maple syrup, flax egg, and soy milk. Stir well to combine.
Add the wet ingredients to the dry and mix well.
Gently fold in the chocolate chips.
Add the batter to a loaf pan lined with parchment paper or lightly spray with oil.
Top with additional chocolate chips, walnut, or banana halves if desired.
Bake for 55 minutes or until a toothpick comes out clean.
