Spinach and Kale Breakfast Hash with Eggs and Naan Bread

"Today I was inspired by @eatsbyames and decided to try out her breakfast hash, which was amazing. The best part is that I got to use some veggies from the garden. I changed up some ingredients but it turned out so yummy.. a little spicy if I do say so myself, but that’s coming from a girl who can’t even handle a level 0 spice level at Thai restaurants."

ingredients

  • 1 potato, cubed and microwaved for 2 minutes
  • 1/2 minced onion
  • 1/2 diced red bell pepper
  • 1 teaspoon minced garlic
  • handful of spinach
  • handful chopped kale
  • 2 teaspoon hemp hearts
  • 2 tablespoon olive oil
  • 1/2 teaspoon Simply Organic turmeric powder
  • 1 teaspoon paprika
  • 1 tbsp filtered water
  • 1 egg
  • 1 tbsp oil
  • naan bread

Method

  • Step 1

    Heat olive oil in a pan. Then add the onions, garlic, and red peppers. Sautee for 5-10 minutes.

  • Step 2

    Once cooked, toss in the cubed potatoes and seasoning. Cook until crispy.

  • Step 3

    Then, add in the spinach and kale until cooked down.

  • Step 4

    I baked some naan bread and fried an egg (in 1 tbsp oil) to add to the side.
