"When I first bought my purple cauliflower I was like what the heck am I going to do with this.. I thought maybe I’d just cut it up, and steam it. Then I was like.. I don’t want NAAN of that. So I decided to make hummus, with a twist."

ingredients

  • 2-3 cups purple cauliflower florets
  • 1/3 cup tahini
  • 1/4 cup olive oil
  • 1 tablespoon honey
  • juice of 1/2 a lemon
  • 1/4 onion, chopped and minced
  • 3 minced garlic
  • salt and pepper, to taste
  • garnish with olive oil, fresh thyme and parsley, chili flakes, and hemp hearts

Method

  • Step 1

    In a food processor, combine all the ingredients. Blend until creamy.

  • Step 2

    Garnish with olive oil, fresh thyme and parsley, chili flakes, and hemp hearts.

  • Step 3

    Serve with a side of baked naan, @simplyorganicfoods turmeric and Italian seasoning.
