Carrot "Fries" with Basil Sauce

"The #fridayfries trend inspired by @starinfinitefood came early to our house tonight in the form of glorious glorious farmers market carrots. And a dipping (or drizzling sauce) that will make you wish your stomach was twice as big."

  • 15 carrots, washed
  • 1 tablespoon avocado oil
  • sprinkle of salt and pepper
  • For the Sauce:
  • 2 handfuls basil
  • zest and juice of 2 lemons
  • 1 giant kale leaf, washed and de-stemmed
  • pinch of salt
  • 1 cup cashews, soaked in water for 4-6 hours


  • Step 1

    Preheat the oven to 425℉.

  • Step 2

    In a large cookie sheet with a rimmed edge, toss together the carrots, olive oil, salt, and pepper.

  • Step 3

    Roast for 30-45 minutes.

  • Step 4

    Make the Sauce: Combine all ingredients in a Vitamix blender and blend until smooth.
