Carrot "Fries" with Basil Sauce

ingredients
- 15 carrots, washed
- 1 tablespoon avocado oil
- sprinkle of salt and pepper
- For the Sauce:
- 2 handfuls basil
- zest and juice of 2 lemons
- 1 giant kale leaf, washed and de-stemmed
- pinch of salt
- 1 cup cashews, soaked in water for 4-6 hours
Method
Step 1
Preheat the oven to 425℉.
Step 2
In a large cookie sheet with a rimmed edge, toss together the carrots, olive oil, salt, and pepper.
Step 3
Roast for 30-45 minutes.
Step 4
Make the Sauce: Combine all ingredients in a Vitamix blender and blend until smooth.
