"Hi lovely people! Are you all excited that the weekend is closer than you think? I know I am. I want to share this rainbow mediterranean Buddha bowl from Tuesday night’s dinner. This bowl includes-- tadaaa drum roll please “Beetilicious Falafels", i.e., beet falafels (? what do you think of that name?), quinoa salad (with rainbow peppers and sunflower seeds), red tango lettuce salad with olive oil, pita bread, purple potato hummus, cherry tomatoes (olive oil and parsley), sautéed eggplants and a colorful squash. The highlight of the bowl was the “Beetilicious Falafels” (lunch for 3 days now ?), a must try!"

Purple potato hummus is the standout of this psychedelic Buddha bowl - as are the beetiliicious falafels

Purple Potato Hummus

Makes about 2 cups hummus

Ingredients 

1 cups of boiled or canned garbanzo beans

1.5 cups of boiled and diced purple potatoes

4 minced garlic cloves 

1/4 cup tahini paste

salt to taste

Juice from 1/2 of a small lemon

3 Tbsp olive oil

Directions:

First blend in the food processor garbanzo beans until chunky, then add all of the remaining ingredients and then blend together. A little water will have to be added depending on the desired thickness. Top with olive oil and paprika or chili powder.
