When @thefeedfeed and @VisitMaine reached out and asked me to create a recipe showcasing a Maine business I was super excited to pay homage to New England as well as highlight one of the awesome, family-owned businesses Maine has to offer. Without further ado, I present the FROZEN CANNOLI BAR. Made with @MaineGrains (bit.ly/maine-grains) rolled oats, these bars are easy and delicious, and I hope that you consider Maine once we are cleared to travel inside the country. Recipe Card

ingredients

  • 32 ounces Mascarpone cheese, at room temperature
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1 cup heavy cream, whipped
  • 1 (14.4 ounce) box graham crackers
  • 1 cup Maine Grains Rolled Oats
  • 1 cup mini chocolate chips

Method

  • Step 1

    Beat Mascarpone cheese, powdered sugar, vanilla, and cinnamon in a medium bowl. Mix in half of the whipped cream.

  • Step 2

    Put one layer of graham crackers in the bottom of a 9x13 pan, filling in as many gaps as possible.

  • Step 3

    Top with half of the Maine Grains Rolled Oats, sprinkled evenly.

  • Step 4

    Top graham crackers with half of the Mascarpone mixture and spread evenly. Add another layer of graham crackers and other half of Maine Grains Rolled Oats.

  • Step 5

    Top with other half of the Mascarpone mixture and spread evenly. Add third layer of graham crackers.

  • Step 6

    Top with remaining whipped cream. Sprinkle the chocolate chips evenly over the top.

  • Step 7

    Put in the freezer for at least 5 hours—the longer the better so the graham crackers have time to soften.
