Add the garlic and the onion to a non-stick frying pan and cook for 2-3 minutes, until fragrant. Add the mushroom and the zucchini, cooking for a further 2-3 minutes until the mushrooms soften. Then, add the chickpeas together with the tamari, rice vinegar and lemon juice, stirring for around 2 minutes. At the last minute, stir in the spinach and serve immediately with rice or noodles of your choice.
