  • 2 cloves garlic
  • 1 medium white onion
  • 3 cups mushrooms
  • 1 medium zucchini
  • 2 (15-ounce) cans chickpeas
  • 1/ 4 cup tamari
  • 2 tablespoons rice vinegar
  • 1 lemon, juiced
  • 2 large handfuls spinach
  • Rice vermicelli noodles, optional, for serving


  • Step 1

    In a medium non-stick pan over medium heat, cook garlic and onion until fragrant, 2-3 minutes. Add the mushroom and zucchini, cook until softened, 2-3 minutes.

  • Step 2

    Add the chickpeas, tamari, rice vinegar and lemon juice, stirring for frequently, 2 minutes. At the last minute, stir in the spinach and serve immediately with rice or noodles of your choice.
