"Vanilla #vegan blueberry pancakes with coconut yogurt and granola 🤩🌎happy April everyone! My intention for this month is definitely to make more space for my physical and mental health. I tend to make myself way more busy than necessary and then forget to prioritize things that make me happy... like cooking, meditation, and yoga . Gotta start lightening my load soon because I’m going a little crazy 😅"

ingredients

  • 1 cup all-purpose flour, or gluten free flour
  • 1 ripe banana
  • 2 tablespoons coconut sugar
  • 1 cup plant-based milk
  • 1 tablespoon baking powder
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons vanilla extract
  • Oil, for the pan

Method

  • Step 1

    Combine all ingredients except the oil in a blender. Blend until smooth.

  • Step 2

    Heat the oil in a pan over medium heat. Pour out 1/4 cup batter for each pancake. Cook until beginning to bubble around the edges, then carefully flip.
