ingredients

  • 8 ounce dried Macaroni Shells
  • 1 cup cooked & chopped Beets
  • 1/2 cup Vegan Mayonnaise
  • 1 tablespoon fresh Lemon Juice
  • 1/2 cup finely diced Red Onion
  • 1/2 cup finely diced Celery
  • 1/4 cup finely diced Green Olives
  • 2 tablespoons fresh chopped Parsley
  • 1 tablespoon fresh chopped Dill
  • 3/4 teaspoo Salt
  • 1/4 teaspoon Pepper

Method

  • Step 1

    Boil macaroni pasta as per package directions

  • Step 2

    In a small bowl, add mayonnaise, lemon juice, red onion, celery, green olives, parsley, salt, and pepper.

  • Step 3

    When the pasta is tender, drain in a colander and add to a large bowl. Add in sliced and quartered beets, and mayonnaise mixture. Mix well to combine. Cover and refrigerate 1-2 hours. Serve chilled.
