Parfaits don't always need to be in a jar, sometimes a plate works too

Chia Parfaits with Almond Milk, Vanilla and Riceflakes

This is an easy to prepare parfait that you can make in advance for some busy mornings or a grab and go breakfast!

Ingredients:

1/2 cup rice flakes
3/4 cup almond milk or milk of your choice
1 tablespoon chia seeds soaked in 2 tablespoons of water
(you can use white chia seeds if you prefer a white parfait)
a pinch of salt
1 teaspoon pure vanilla extract
sweetener of your choice, I use maple syrup
optional some grated tonka bean
1 tablespoon maple syrup for topping
1 teaspoon cacao nibs
fresh berries of your choice

Directions:

Fold the rice flakes, milk, vanilla and the soaked chia seeds in a jar or a bowl. Let the mixture set in the fridge overnight or for some hours.

Check your parfait in the morning if it has your prefered texture and add more liquid if needed. I let the parfait stand at room temperature for about 10 minutes to warm up a little during preparing my morning coffee.

When you are in a hurry, because you forget to soak your mixture the night before, cook the flakes with the milk and a pinch of salt for a few minutes, like cooking porridge before you stir in the chia seeds.

Top your bowl or jar with fresh berries, maple syrup if you like and some cacao nibs. Enjoy
