Recipe Card

Pancakes

ingredients

  • 2 egg yolks, whites set aside
  • 2 tablespoons milk
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon baking powder
  • 4 tablespoons flour
  • Pinch of salt

Meringue

ingredients

  • 2 egg whites
  • 3 tablespoons hot maple syrup
  • 1/4 lemon
  • Pinch of salt

Maple Whipped Cream

ingredients

  • 1/3 cup double cream
  • 3 tablespoons maple syrup
  • 1/2 lemon, zested
  • Pinch of salt

Pancakes

Method

  • Step 1

    Pre-heat a large pan, with the lowest heat. Oil the pan.

  • Step 2

    Separate 2 large eggs into 2 bowls (put the whites in a large bowl!). To the yolks add: milk, vanilla extract, baking powder, salt, mix, add flour and mix again until smooth - set aside.

  • Step 3

    To make the meringue, add lemon juice and salt to the bowl with the egg whites. Whisk until frothy.

  • Step 4

    Microwave 3 Tbsp maple syrup in a microwave safe bowl for 50 seconds. Whisk egg whites again and slowly drizzle the warm maple syrup in. Whisk until super glossy and stiff peaks form.

  • Step 5

    Fold the pancake and meringue mixtures to combine. Do not overmix.

  • Step 6

    To cook the pancakes, add a big spoon of batter to your oiled pre-heat pan. Make a little dent and add another big spoonful on top.

  • Step 7

    Cover with a tall lid and cook for 6 minutes. Remove the lid and add another spoon of batter on top. Add a tablespoon of water on the edge of the pan to create steam add return the lid. Cook for 3 more minutes.

  • Step 8

    Remove the lid and careful and confidently flip. Add the lid and leave for 6 minutes. Remove from heat.

Maple Whipped Cream

  • Step 1

    In the meantime make your maple whipped cream. Whip it until its a thick paint consistency. Serve atop pancakes with sliced strawberries.
