2 1/2 cups rolled oats
1 cup buckwheat groats
3/4 cup dried cranberries
1/2 cup creamy unsalted organic peanut butter
1/2 cup coconut oil
2 tsp vanilla extract
1/4 tsp Himalayan salt (or your preferred fine grain version)
2 tbs chia seeds

(Optional mix in:1/4 cup hemp seeds or favorite unsalted nut)

Preheat oven to 350 degrees Fahrenheit.

Mix oats and buckwheat groats In large bowl and set aside.

Combine maple syrup, coconut oil, peanut butter, vanilla, salt and chia in sauce pan over low heat. Stir until well combined. Pour the sauce over the dry ingredients and toss to coat.

Place your mixture on a baking sheet lined with parchment paper, spread evenly. Bake for 15 minutes. Take the granola out give it a good toss and bake for another 8-10 minutes until golden brown.

It will harden as it cools so DO NOT OVER BAKE. Once it has cooled toss in your dried cranberries and enjoy!!
