ingredients

  • 1 cup (250 ml) milk, any type
  • 4 tablepoons unsalted butter
  • 3 teaspoon instant dry yeast
  • 4 cups (500 grams) bread flour
  • 1/2 cup (100 grams) granulated white sugar
  • 1 egg
  • 1 teaspoon salt
  • 5 tablespoons chocolate hazelnut spread, such as Nutella
  • 1 large orange, zested

Method

  • Step 1

    Place the milk in a small saucepan and heat it until lukewarm. Take1/2 cup off the warm milk into a separate cup and add 1 tsp of sugar. Stir to dissolve sugar and then add the yeast. Give it a stir and set aside for 15 minutes to activate it.

  • Step 2

    Add the butter to the rest of your milk and melt the two together gently. Set aside.

  • Step 3

    In a bowl of your stand mixer fitted with the dough attachment, mix the flour, sugar, and salt. Then add yeast mixture, egg, milk, and butter mixture. With the mixer running on low speed, mix together for 2 minutes. Increase the speed to high and mix further for 6-8 minutes until you have a smooth and elastic dough that no longer sticks to the sides of the bowl. Transfer the dough onto a lightly floured surface, roll into a ball and place it in a clean, lightly oiled bowl. Cover with plastic wrap or lint-free kitchen towel and let it rise somewhere warm for 2 hours or until doubled in size.

  • Step 4

    Remove the dough from the bowl into a lightly floured surface. Gently knock out the air from it and stretch it into a rough rectangle shape. Using a rolling pin, roll the dough into a large rectangle. Roughly about 40 x 50 cm (15 x 50 inch).

  • Step 5

    With the longer edge of the rectangle facing you, spread the Nutella over 2/3 of the rectangle, leaving 1/3 clean. Sprinkle the orange zest over the Nutella covered portion.

  • Step 6

    Fold the clean portion of the rectangle towards the middle, then fold the other end of the dough on top of that. Using a rolling pin, roll it over the rectangle to flatten it out and to stretch it a bit.

  • Step 7

    Using a very sharp knife or a pizza cutter, trim the edges of your rectangle. Slice the rectangle in half, then each half in half again, and again until you have 8 long strips of the dough. Starting at one end of the strip, start rolling it tightly, tucking the end underneath. Place the rolled bun into a baking tray lined Silpat or some parchment paper. Repeat with all of the remaining strips.

  • Step 8

    Cover the buns loosely with plastic wrap or kitchen towel and set them aside for at least an hour (you can also place them in the fridge to prove overnight).

  • Step 9

    Preheat the oven to 350F or 175C. Brush the buns with egg wash.Place the baking tray in the middle shelf and bake for about 18 minutes or until golden brown and risen. Enjoy!
