For the Lemon Curd
ingredients
- 100 ml (from about 3-4 lemons) fresh lemon juice
- 1 teaspoon lemon zest
- 3 large eggs
- 3/4 cup (150 grams) granulated sugar
- 3 1/2 tablespoons (50 grams) unsalted butter
- Pinch of fine sea salt
For the Tiramisu Cream:

- 1 1/4 cups (300 grams) mascarpone cheese
- 1/2 cup (60 grams) powdered sugar
- 1/2 cup (100 ml) lemon curd (recipe above)
- 3/4 cup (200 ml) heavy cream

- 28 ladyfinger cookies
- 1 cup water
- 2 tablespoons granulated sugar
- 1 tablespoon fresh lemon juice
To Make the Lemon Curd:
Method
Step 1
In a small saucepan, combine fresh lemon juice, lemon zest, eggs, granulated sugar, and a pinch of salt.
Step 2
Cook over low heat, stirring continuously, until the mixture thickens.
Step 3
Remove from heat and stir in the butter until melted. Strain the mixture through a sieve and refrigerate for at least 1 hour.
To Make the Tiramisu Cream:
Step 1
In a mixing bowl, whip the heavy cream until soft peaks form.
Step 2
In another bowl, combine mascarpone cheese, powdered sugar, and the chilled lemon sauce.
Step 3
Gently fold the whipped cream into the mascarpone mixture until well combined.
To Prepare the Ladyfingers:
Step 1
In a shallow dish, mix together water, lemon juice, and sugar. Dip each ladyfinger into the mixture briefly, ensuring they are moist but not soggy.
Assemble the Tiramisu:
Step 1
Arrange half of the soaked ladyfingers in a single layer in the serving dish. Spread half of the tiramisu cream over the ladyfingers.
Step 2
Layer the remaining ladyfingers on top, followed by the remaining tiramisu cream.
Step 3
Finally, drizzle the remaining lemon sauce over the top.
Step 4
Cover the dish and refrigerate for at least 2 hours before serving to allow the flavors to meld together.
Step 5
Once chilled slice, serve, and enjoy!
