  • 1 Double 8 Cattle Company Fullblood Wagyu Chuck Eye Steak
  • 1/2 diced White Onion
  • 1/2 skin removed and diced Mango
  • 1 skin removed Kiwi
  • 1 seeds removed Habanero
  • 1 ounce peeled and minced Ginger Root
  • 3 stalks chopped Green Onions
  • 3 sprig Thyme
  • 2 ounces Olive Oil
  • 2 ounces Apple Cider Vinegar
  • 3 ounces Honey
  • 1/2 teaspoon Fennel Seed
  • 4 Cloves
  • 4 cloves Garlic
  • 1 Star Anise
  • 1/2 teaspoon Cumin Seed
  • 1/2 teaspoon Allspice
  • 2 teaspoons Kosher Salt
  • 1 teaspoon freshly ground Black Pepper
  • 2 juiced Limes

Mango Relish

  • 1/2 Mango
  • 2 stalks Green Onion
  • 1 juiced Lime
  • 1 seeds removed Jalapeno
  • Pinch of Kosher Salt (to taste)
  • Pinch of Freshly Ground Black Pepper (to taste)

Method

  • Step 1

    PREPARING THE JERK MARINADE Place fennel, star anise, clove, cumin seed, allspice, and cinnamon in a small pan. Place the pan over the stove on medium heat. Constantly moving the pan over the heat, cook the spices until they become fragrant. This takes around 3 minutes. Remove from heat. Place the cooked spices and remaining jerk marinade ingredients (onions, mango, kiwi, habanero, ginger root, thyme, olive oil, apple cider vinegar, honey, cloves, garlic cloves, lime juice, kosher salt, and freshly ground pepper) in a food processor or blender. Note: For a less spicy marinade, only use half of a habanero. Blend ingredients until a smooth consistency. Pour the marinade over the Fullblood Wagyu chuck eye steak in a casserole dish or in a Ziploc bag. Ensure the marinade is covering the entire steak. Refrigerate, and let the chuck eye steak marinade for at least 6 hours. The apple cider vinegar and enzymes in the kiwi with help break down the collagen in the steak, resulting in an even more tender cut.

    PREPARING THE MANGO RELISH For the relish, peel and dice the remaining half of the mango. Slice the green onion, and dice the jalapeño. Mix the diced mango, jalapeño, and green onion together. Add the juice of one lime. Season with kosher salt and freshly ground black pepper.

  • Step 3

    FINAL STEPS Remove the Fullblood Wagyu chuck eye steak from the marinade. Do not rinse it off. Place steak on a hot charcoal or propane grill. Cook until an internal temperature of 120 degrees Fahrenheit for rare finish. For a medium-rare finish, cook to an internal temperature of 130-135 degrees Fahrenheit. Let the steak rest at room temperature for 10 minutes. Slice the steak against the grain, and top with mango relish. Sprinkle fresh cilantro on top, and serve with bibb lettuce or your favorite white rice. Enjoy!
