I love making a large batch of this using canned Tuttorosso Diced Tomatoes and enjoying throughout the fall and winter months. Vegetarian Bean Chili:

ingredients

  • 2 tablespoons olive oil
  • 1 medium white onion, chopped
  • 2 carrots, chopped
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 1/2 teaspoons ground cumin
  • 2 tablespoons chili powder
  • 1 teaspoon smoked paprika
  • salt, to taste
  • black pepper, to taste
  • 1 (28 ounce) can Tuttorosso Diced Tomatoes
  • 2 cups vegetable stock
  • 1 (15 ounce) can red kidney beans, rinsed and drained
  • 2 (15 ounce cans) black beans, rinsed and drained

Toppings:

  • sharp cheddar cheese, shredded
  • sour cream
  • cilantro, chopped
  • jalapeños, sliced `
  • lime, cut into wedges

Method

  • Step 1

    Heat olive oil in a heavy-bottomed pot over medium-high heat. Add in chopped onion, carrot, red bell pepper, and salt. Sauté for 8 minutes or until onion becomes translucent.

  • Step 2

    Lower the heat to medium and add in minced garlic, cumin, chili powder, pepper to taste, and smoked paprika. Stir for 2 minutes until garlic is fragrant.

  • Step 3

    Add in Tuttorosso diced tomatoes with the juices, vegetable broth, and beans. Mix well before bringing to a boil. Reduce heat, while stirring occasionally to achieve a slow simmer for 30 minutes or until chili thickens.

  • Step 4

    Serve and top with sliced jalapeños, lime wedges, grated cheese, and chopped cilantro.
