ingredients
- 1 1/2 cups all purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup granulated sugar
- 1/4 cup extra virgin olive oil
- 1/4 cup buttermilk
- Zest and juice of 1 lemon
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup fresh strawberries, quartered
- 1 tablespoon course sugar
Method
Step 1
Preheat the oven to 350℉. Spray an 8” square cake pan with baking spray or line with parchment and set aside.
Step 2
In a large bowl, combine the sugar, olive oil, buttermilk, vanilla extract, lemon zest, and lemon juice. Mix until well combined, then add in the eggs.
Step 3
Beat until smooth, then add in the flour, baking powder, baking soda, and salt. Beat on medium until the batter is light and fluffy. Pour into your prepared cake pan.
Step 4
Scatter the strawberries on top and sprinkle with course sugar. Bake the cake for about 30-35 minutes then check for doneness
