ingredients

  • 2/3 cup milk
  • 1/4 cup vegetable oil
  • 1/2 cup mashed very ripe banana (about 1 medium banana)
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 2 cups all-purpose flour
  • 2/3 cup sugar
  • 2 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup blueberries
  • 1/2 cup chopped strawberries
  • sugar, to sprinkle

Method

  • Step 1

    Heat oven to 400ºF and grease bottoms only of 12 regular-size muffin cup or line with paper baking cups.

  • Step 2

    Beat milk, oil, banana and egg in large bowl with fork. Add sugar and mix until combined. Add egg and vanilla and stir. Stir in remaining ingredients, except berries just until flour is moistened.

  • Step 3

    Fold in berries being careful not to overmix. Divide batter evenly among muffin cups and sprinkle with sugar.

  • Step 4

    Bake 18 to 20 minutes or until golden brown. Immediately remove from pan.
