1/2 cup sour cream
1/2 cup mayonnaise
1/2 canned chipotle chile in adobo, seeds removed, chopped (about 1 Tbsp.)
1 tablespoon chopped fresh cilantro
2 tablespoons lime juice
1/2 teaspoon salt
Freshly ground pepper
Peel potatoes and cut into wedges. Toss with a little olive oil and sprinkle 1/2 tsp cayenne, 1/2 teaspoon smoked paprika, 1/2 teaspoon cumin, salt and pepper. Bake in 400F oven for 20-14 minutes turning once mid way through, until tender and a fork can easily pierce.
