Chocolate Frosted Banana Cake

For the cake:
2 over ripe bananas mashed, approximately ¾ cup
¾ cup sugar
1 egg
½ cup unsweetened apple sauce
¼ cup vegetable oil
½ tsp vanilla extract
1¼ cup flour
½ tsp baking soda
½ tsp baking powder
¼ tsp salt
Preheat the oven to 350F and coat an 8 inch baking pan with cooking spray.
Mash the bananas with the sugar and mix until smooth. Mix in the egg, oil and apple sauce and vanilla. Add the dry ingredients until just combined.
Spread evenly in the pan and bake for 30 minutes. Cool completely before frosting.
For the Frosting:
4 tablespoon melted butter
1/3 cup Cocoa
1 1/2 cups powdered sugar
4 tablespoon heavy cream
1/2 teaspoon vanilla extract
Melt the butter. Stir in cocoa and bet until smooth. Add powdered sugar, cream and vanilla and beat until smooth and spreading consistency. Add small amount additional cream or milk, if needed to get the consistency you want.
