ingredients
- 4 sweet potatoes
- 1 cup quinoa, rinsed
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 2 small zucchini, chopped
- 1 small red onion, thinly sliced
- 3 cloves garlic, minced
- Olive oil, as needed
- 1 teaspoon cumin
- 1 teaspoon turmeric
- 1 pinch nutmeg
- 1/2 cup vegan yogurt
- 1 tablespoon lemon juice
- Cillantro, for serving
Method
Step 1
Preheat oven to 350ºF. Once heated, bake sweet potatoes on a sheet pan for about 45 minutes or until cooked through. Remove from oven and slice lengthwise, not cutting all the way through.
Step 2
Over medium heat, sauté onion and garlic in olive oil until starting to brown. Add the rest of the vegetables and sauté for about 5 more minutes. Take off the heat and add spices.
Step 3
Put quinoa in a small sauce pan with 2 cups of water. Bring to a boil, reduce heat and let simmer until cooked, about 20 minutes.
Step 4
Mix quinoa with vegetables and stuff sweet potatoes. Mix yogurt with lemon juice, then use it to drizzle on top, along with fresh cilantro.
