ingredients
- 1 finely chopped onion
- 1 stick finely chopped celery
- 1 finely sliced carrot
- 2 tsp cumin
- 1 chilli flakes
- 150 red lentils
- 1 litre vegetable/chicken stock
- 1 finely chopped, for garnish red chilli
- 2 tablespoon double crem
Method
Step 1
Heat olive oil in a deep pan and add the onion, celery and carrot until softened.
Step 2
Add the cumin, coriander, chilli flakes, lentils and stock. Add salt & pepper to season. Simmer for 20 minutes and liquidise.
Step 3
Garnish with a few sliced chillis per serving and a swirl of cream. Salt & pepper as needed.
