ingredients
- 2 tablespoons olive oil
- 2 shallots, finely sliced
- 3 cloves garlic, sliced
- 24 ounces cherry tomatoes, halved
- 10 ounces spaghetti
- 1 3/4 ounces anchovies, drained and chopped
- 1 zucchini, peeled into ribbons
- 1 bunch kale, roughly chopped
- 2 tablespoons black olives
- 1 tablespoon capers
- 8 ounces goat cheese, divided
Method
Step 1
To make tomato sauce, heat a large pan with oil. Add the shallots and garlic and cook until softened, approximately 3 minutes. Add the tomatoes and cook gently for 30-40 minutes.
Step 2
Bring a large pot of salted water to a boil and cook the spaghetti according to package directions. Drain and set aside.
Step 3
Heat a medium skillet with oil on medium high heat and cook the anchovies, zucchini, and kale.
Step 4
Add capers, olives and stir in the tomato sauce and 6 ounces of goat cheese until melted.
Step 5
Serve with some crumbled goat cheese on top.
