Pesto Gnocchi with Lemon and Zucchini

  • 1 (16-ounce) package gnocchi
  • 1 onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 1/2 lemon, zested
  • 1 tablespoon jarred pesto
  • 1 zucchini, finely sliced
  • 1 (8-ounce) package cherry tomatoes, halved
  • 2 handfuls spinach
  • Parmesan, for garnish
  • 4 ounces mozzarella
  • Kosher Salt and pepper, to taste


  • Step 1

    Heat a large pan with oil on medium heat and cook the onion until is softened, 3-4 minutes. Add the garlic, tomatoes, zucchini and lemon zest. Cook for 10 mins, stirring frequently.

  • Step 2

    While the vegetables are cooking, cook the gnocchi according to package directions.

  • Step 3

    Once cooked, add the gnocchi, pesto, lemon juice and spinach to the vegetables. Season with salt and pepper and stir.

  • Step 4

    Garnish with mozzarella and Parmesan.
