  • 2 tablespoons olive oil
  • 1 finely chopped onion
  • 3 cloves finely chopped garlic
  • 1 pack halved cherry tomatoes
  • 2 chunky naturally smoked cod loins
  • 1/2 pack samphire
  • 1 tin butter beans
  • 1 lemon
  • salt & pepper
  • 2 tablespoons butter


  • Step 1

    Preheat the oven to 200 C.

  • Step 2

    In a mixing bowl, mix together the onion, garlic, samphire, juice of half a lemon, olive oil, salt & pepper.

  • Step 3

    Line an oven dish with tin foil, pour in the tomato mixture and nestle in the cod. Place the butter on top of the fish and squeeze the lemon juice over.

  • Step 4

    Loosely wrap the fish to make a parcel. Bake until the cod is opaque, around 20 minutes.

  • Step 5

    Heat a small saucepan with oil and add the butter beans, cook for around 2 minutes.

  • Step 6

    Divide beans into dishes, serve the cod, samphire and cherry tomatoes on top. Garnish with a wedge of lemon.
