ingredients

  • 10 ounces Spaghetti
  • 3 shallots, thinly sliced
  • 150 milliliter White wine (optional)
  • 1/2 red chilli, finely sliced, plus more for garnish
  • 1 small bunch parsley, chopped
  • 1 pound king prawns
  • 250 Double cream
  • 125 Chicken stock
  • Parmesan, grated
  • arugula to garnish
  • lemon, for garnish

Method

  • Step 1

    Cook the spaghetti according to package directions. Drain into colander, drizzle with olive oil and mix. Reserve.

  • Step 2

    While pasta is cooking, add oil to a medium skillet on medium heat. Once oil is shimmering, cook shallots, chilli and garlic until softened, 2-3 minutes. Add wine and simmer for 2 minutes.

  • Step 3

    Stir in the stock, cream and parsley. Leave to simmer for 2 minutes.

  • Step 4

    Add the prawns, Parmesan, salt & pepper and cook for 3 minutes. Add the pasta and cook until combined, 1-2 minutes.

  • Step 5

    Serve with arugula and chili on top with a wedge of lemon.
