ingredients
- 1 broccoli, broken into small florets
- 320 gram pasta
- 2 cloves crushed garlic
- 1 pack fresh basil
- 50 gram crushed cashews
- 4 tablespoons olive oil
- Zest of 1.5 lemons
- Salt
- Pepper
Method
Step 1
Cook the pasta, adding some oil for 10 minutes. Keep some pasta water after draining.
Step 2
Cook the broccoli for 3 minutes until tender.
Step 3
Put all other ingredients in blender plus some pasta water to loosen. Add salt & pepper as needed.
Step 4
Mix the pesto in with the drained pasta and put back on heat, add a little bit of pasta water.
Step 5
Serve with basil and some crushed cashews.
