ingredients
- 1 tabelspoon cooking oil
- 1 onion, choppped
- 2 Roma tomatoes, choppped
- 1/2 bag Alexia Organic Yukon Select Fries with a Touch of Sea Salt
- 1 can corned beef
- Kosher salt and pepper to taste
To air fry the fries:
Method
Step 1
Preheat air fryer to 360 °F.
Step 2
Fill basket no more than half full. Cook 9-10 minutes. Slide out basket halfway through cooking time and shake.
Step 3
Set aside until ready to serve.
To make the corned beef:
Step 1
Heat oil in a large skillet onions and sauté until onions have caramelized to a light brown color. Usually it takes about 2-3 minutes.
Step 2
Add the corned beef and sauté until beef has been fully incorporated with onions.
Step 3
Add tomatoes
Step 4
Add fries and mix until incorporated with the corned beef mixture
Step 5
Season to taste [Note: Corned beef is already quite salty, just be mindful of that and adjust according to your taste]. Serve immediately with rice or pan de sal.
