"RECIPE:
RAW VANILLA-ORANGE CHEESECAKE
(vegan, sugar-free, gluten- and grain free)
INGREDIENTS
Crust:
1 cup cashews, soaked
½ cup almonds, soaked
½ cup shredded coconut
¼ cup coconut oil
1 orange, juice and zest
Pinch of salt
Filling:
1 ½ cups cashews, soaked
½ cup coconut oil
1 cup coconut cream
¼ cup shredded coconut
2 oranges, juice and zest
1 vanilla bean, seeds
Decoration:
5-7 figs
7-10 blackberries
Coconut smiles
Shredded coconut
METHOD
Combine all crust ingredients in a blender and pulse until just combined. Line a spring form (8” diameter) with parchment paper. Press the batter into the bottom of the spring form. Place in the freezer until solid.
Combine all filling ingredients in a blender and blend on high speed until smooth. Pour the filling on the hardened crust and place the spring form back in the freezer for a couple of hours. Move the cake to the fridge for another few hours until the texture is silky-smooth.
Remove the cake from the spring form and decorate with figs, blackberries, coconut smiles and shredded coconut.
Tip: If you are not used to eating unsweetened desserts, you can replace the ¼ cup shredded coconut in the filling with ¼ cup of maple syrup or coconut nectar. "
