Serves 2 Ingredients: 2 eggs 4 tbsp butter at room temperature Salt and pepper 4 slices of bread (white or wheat) 1 oz of watercress Cook eggs: in a pot bring water to a boil. Then add the eggs. Turn off heat and cover. Let it rest for 8 minutes and then remove eggs from water. Place eggs in a bowl with iced water to stop cooking process. Then remove and peel the eggs. While they are still warm mash them with the butter. Season with salt and pepper to taste. Prepare the sandwiches: place the egg salad on top of one slice of bread, then top with watercress. Place the other slice to make the sandwich. Remove crust. Cut each sandwich in 4 triangles ( 2 diagonal cuts)
