Prep time 10 minutes
Cook time 40 minutes
Drizzle carrots with olive oil and sea salt.
Roast carrot in pre-heated oven for 30-40 minutes
Sauté́ onion in olive oil until soft. Add roasted carrots, broth and salt. Bring to a boil and simmer for approximately 10 minutes until fork tender.
Using an immersion blender, blend soup until pureed to desired consistency.
Check seasonings and adjust according to your taste.
