  • 1/2 Onion, chopped
  • 1 pounds Carrots, roasted in Olive oil & Sea salt
  • 1 clove Garlic or Shallot
  • 2 tablespoons Olive oil. More for roasting
  • 4 No-Chicken Broth or homemade NO Bone Broth
  • 1 teaspoon Salt
  • 1 inch piece Ginger, peeled


  • Step 1

    Drizzle carrots with olive oil and sea salt. Roast carrot in pre-heated oven for 30-40 minutes

  • Step 2

    Sauté́ onion in olive oil until soft. Add roasted carrots, broth and salt. Bring to a boil and simmer for approximately 10 minutes until fork tender.

  • Step 3

    Using an immersion blender, blend soup until pureed to desired consistency. Check seasonings and adjust according to your taste.
