"Makhana/fox nuts are dried lotus seeds. In North India they're commonly roasted in ghee, seasoned with chaat masala, black salt & chilli powder and eaten as a snack. If made well, they're delicious and a decidedly healthier snack option owing to their high protein, fiber & mineral content. They also have a low glycemic index and are low in sodium. My son loves them and I'm quite happy allowing him to munch on these instead of store-bought potato chips or microwave popcorn. I made them a little differently yesterday and they turned out very well. Prepared this way, they'd be good to serve with drinks too. Am sharing the recipe for anyone who'd like to try.

Fox Nuts coated with indian street food masalas
Herb Fox Nuts
Spice Mix:
1 tsp crushed red chilli flakes (1/2 tsp if you prefer them less spicy)
1 tsp mixed dried herbs
1 tsp finely chopped fresh rosemary
1/2 tsp freshly cracked black pepper
1 tbsp olive oil
Mix all ingredients together until combined.
Nuts:
2 tbsp @amul_india herb & garlic buttery spread (use olive oil if you want to keep it vegan)
100 gms (approx 4 cups) fox nuts
sea salt to taste
In a wok/kadhai heat the herd & garlic spread. Add fox nuts and roast on medium-low heat, stirring continuously for 10-12 minutes or until the fox nuts change color and turn crunchy. Remove from heat and toss well with the spice mix.
Check for seasoning and enjoy! Store cooled fox nuts in an airtight container.
