ingredients
- 2 green chillies
- 2 stalks finely sliced lemongrass
- 1 tablespoons ginger/ galangal
- 6 cloves garlic
- 1 chopped onion
- 2 tablespoons soy sauce
- 1 cups coriander leaves
- fresh basil leaves
- 4 kaffir lime leaves
- 1 zest of lime
- 1 tablespoon coriander powder
- 1 tablespoon cumin powder
- 1 teaspoon salt
- 1/2 juice lime
- 1/2 cup mushroom
- 1 thinly sliced carrot
- 1/4 cup babycorn
- 1 head cut into chunks broccoli
- 1 bite sized cubes tofu
- 6 tablespoon green paste
- 1 1/2 cups coconut milk
- 1 teaspoon brown sugar
- 4 tablespoon Light soy sauce
- 1/4 cup water
- 6 kaffir lime leaves
- 1 zest lime
- 1 juice lime
- To Taste salt
- To Taste chilli powder
Method
Step 1
Pound or blend together all the ingredients ( 1 - 14) till you get a smooth paste.
Step 2
Heat some oil and stir fry the paste for 2 min with half cup of coconut milk.
Step 3
Add the vegetables and stir fry for 2 mins. Add the rest of coconut milk, salt, light soy, brown sugar and kaffir lime leaves. Taste for chilli.
Step 4
Add some water and Cook for 5-7 mins on low heat.Add the tofu and remaining coconut milk. Simmer on low heat for 5 mins.
Step 5
Taste and adjust taste of salt and soy sauce, sweet and lime and chilly
Step 6
Finish with Thai basil, fresh lime juice and serve with rice
