ingredients

  • 2 green chillies
  • 2 stalks finely sliced lemongrass
  • 1 tablespoons ginger/ galangal
  • 6 cloves garlic
  • 1 chopped onion
  • 2 tablespoons soy sauce
  • 1 cups coriander leaves
  • fresh basil leaves
  • 4 kaffir lime leaves
  • 1 zest of lime
  • 1 tablespoon coriander powder
  • 1 tablespoon cumin powder
  • 1 teaspoon salt
  • 1/2 juice lime
  • 1/2 cup mushroom
  • 1 thinly sliced carrot
  • 1/4 cup babycorn
  • 1 head cut into chunks broccoli
  • 1 bite sized cubes tofu
  • 6 tablespoon green paste
  • 1 1/2 cups coconut milk
  • 1 teaspoon brown sugar
  • 4 tablespoon Light soy sauce
  • 1/4 cup water
  • 6 kaffir lime leaves
  • 1 zest lime
  • 1 juice lime
  • To Taste salt
  • To Taste chilli powder

Method

  • Step 1

    Pound or blend together all the ingredients ( 1 - 14) till you get a smooth paste.

  • Step 2

    Heat some oil and stir fry the paste for 2 min with half cup of coconut milk.

  • Step 3

    Add the vegetables and stir fry for 2 mins. Add the rest of coconut milk, salt, light soy, brown sugar and kaffir lime leaves. Taste for chilli.

  • Step 4

    Add some water and Cook for 5-7 mins on low heat.Add the tofu and remaining coconut milk. Simmer on low heat for 5 mins.

  • Step 5

    Taste and adjust taste of salt and soy sauce, sweet and lime and chilly

  • Step 6

    Finish with Thai basil, fresh lime juice and serve with rice​
