Caramelised Carrots with Lemon Tahini Sauce

The caramelised syrup gives a natural sweetness while the carrots and sesame are nice and crunchy. You can use the same technique with sweet potato, pumpkin or make a mixed veggie platter!"

Caramelised Carrots

ingredients

  • 4 carrots,
  • 2 tbsp date syrup
  • 2 tbsp olive oil
  • 1 tsp ground cilantro
  • 1/2 tsp salt
  • freshly ground black pepper
  • fresh thyme
  • sesame seeds

Method

  • Step 1

    Preheat the oven to 200 C (390 F).

  • Step 2

    Peel and cut the carrots lengthwise.

  • Step 3

    Place carrots in a baking dish or tray and drizzle with olive oil, date syrup, cilantro, salt & pepper. Use your hands to toss and evenly coat the carrots.

  • Step 4

    Roast for 10 mins then toss and put back till done. The edges should be caramelized and insides tender after another 20-30 mins. Sprinkle sesame seeds and thyme over. Adjust seasoning.

Lemon Tahini Sauce

ingredients

  • 2 tbsp tahini
  • 1/4 cup lemon juice
  • 1/2 cup finely chopped parsley
  • 2 garlic cloves, minced
  • water, as needed

  • Step 1

    Whisk the tahini with the minced garlic and half the lemon juice. The mixture will stiffen. Gradually whisk in up to ½ cup water until the mixture has the consistency of thick cream. Add salt to taste. Stir in the parsley. Taste and add more lemon juice if you like.

  • Step 2

    If you are not a fan of strong sesame flavours, add a small dollop of thick yogurt. This is optional and a matter of individual taste.
