Serves or Makes: 8


For the Donuts:

  • 170 grams cake flour, sifted
  • 120 grams sugar
  • 1 whole egg, beaten
  • 1 egg, yolk only
  • 75 millimeters (1/4 cup + 2 tablespoons) buttermilk
  • 36 grams (2 tablespoons) butter, melted
  • 1 lemon, zested (2 teaspoons)
  • 1 teaspoon Neilsen-Massey Lemon Extract
  • 1 teaspoon Neilsen-Massey Vanilla Extract
  • 1/ 2 teaspoon salt
  • 1/ 2 teaspoon baking powder
  • 1/ 2 teaspoon baking soda

For the Glaze:

  • 1 cup confectioner's sugar, sifted
  • 2 tablespoons milk

For the Donuts:


  • Step 1

    Preheat Oven to 350 degrees F.

  • Step 2

    Whisk flour, sugar, baking powder, baking soda, and salt together in bowl.

  • Step 3

    In separate bowl, whisk together buttermilk, butter, eggs, extracts, and zest.

  • Step 4

    Fold wet ingredients into dry ingredients. Do not over mix.

  • Step 5

    Prepare donut pan with non stick spray.

  • Step 6

    Place batter in a pastry bag and snip the end. Fill donut cavities about half full.

  • Step 7

    Put donuts in oven for 8-10 minutes. Donuts should spring back when touched.

For the Glaze:


  • Step 1

    Mix together in bowl with wooden spoon. Do not whisk.
