"It took us months to figure out a vegan “meatball” recipe that we truly loved. They were either too dry, too moist, not flavorful enough, or completely fell apart in sauce, but after countless renditions, we finally landed on a lentil-based mixture that’s crispy on the outside and soft, light and flavorful on the inside.
