Recipe Intro From crepesandbows

Use Annie's Organic Original BBQ Sauce to marinate these chicken kebabs and grill them off with your favorite summer vegetables. For an added umph! of flavor, brush them with extra sauce as soon as them come off the grill and let them rest a few minutes. If you're using wooden skewers, makes sure to soak them in water to prevent them from burning.

ingredients

  • 2 medium potatoes, cut into wedges
  • 3 chicken tenders, cut into even cubes
  • 2 tablespoons Annie's Organic Original BBQ Sauce
  • 4 tablespoons olive oil, divided
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 1/2 teaspoons garlic salt
  • 1/2 red bell pepper, cut into 2-inch pieces
  • 1/2 red onion, cut into thick slices
  • 2 cups mixed greens
  • 4 tablespoons Annie's Cowgirl Ranch Dressing

Method

  • Step 1

First, make a marinade for the chicken. Combine BBQ sauce, 2 tablespoons olive oil, sea salt and black pepper, stir together. Combine with chicken and marinade for at least 30 minutes. Thread the chicken, onion and bell peppers evenly onto the skewers.

  • Step 2

Preheat oven to 400˚F degrees. Season potatoes with remaining olive oil and garlic salt and bake for 30 minutes or until golden brown.

  • Step 3

Preheat the grill to medium heat. Once the grill is hot, place the chicken kebabs evenly on the grill. Cook for 10-14 minutes, turning once halfway through, until the chicken is golden brown and cooked through.

  • Step 4

Arrange mixed greens on a clean plate, add baked potatoes, chicken kebabs and Annie's Cowgirl Ranch Dressing. Enjoy!
