ingredients
- 60 grams butter
- 60 grams flour
- 600 ml milk
- 1/4 whole nutmeg, shaved
- 60 grams parmesan reggiano
- 350 grams macaroni pasta, cooked al dente
- 5 stalks tuscan kale, leaves only
- 1 tablespoon chilli flakes
- Parmesan reggiano, for serving
- Sea salt
Method
Step 1
Preheat oven on grill setting to highest temperature.
Step 2
Start by making the béchamel sauce. Melt butter in deep pot over high heat and as soon its melted, stir in flour and cook for a minute.
Step 3
Add in your milk and then whisk hard until béchamel thickens and coats a spoon with ease. Stir in your nutmeg and parmesan (sea salt to taste) and allow to melt in, before stirring in your macaroni and tuscan kale.
Step 4
Pour mixture into oven tray and sprinkle over your red chilli flakes and extra parmesan (enough to cover) before placing in oven, under grill and cooking until your cheese top is all melted and golden.
Step 5
Remove and serve hot.
