- 12 ounces spaghetti
- 1 can Muir Glen Organic Petite Diced Fire Roasted Green Tomatoes
- 2 tablespoons extra virgin olive oil, plus more for drizzling
- 6 garlic cloves, thinly sliced
- 2 teaspoons dried chili flakes
- 2 tablespoons unsalted butter
- 1/2 bunch fresh parsley
- 1/3 cup parmesan cheese, finely shredded
- Kosher salt, to taste
Method
Step 1
Cook spaghetti until slightly before al dente. Remove noodles and set aside. Reserve ½ cup pasta water.
Step 2
In a pan on medium heat, add oil. Stir in garlic and chili flakes. Cook for around 1 minute.
Step 3
Add in green tomatoes and salt. Stir to mix. Cook until simmering.
Step 4
Add in cooked noodles and pasta water. Add in butter. Mix until butter is melted. Add parsley. Turn off heat. Toss noodles to mix.
Step 5
Transfer into a serving dish. Top with more olive oil, parmesan cheese, and more parsley. Serve immediately.
