ingredients
- 10 ounces egg noodles
- 4 tablespoons cooking oil
- 4 stalks of scallions, julienned into 3 inch pieces
- 1/2 onion, thinly sliced
- 1 cup bean sprouts
- 2 tablespoons sesame oil

Sauce
- 1 1/2 tablespoons oyster sauce
- 1 1/2 tablespoons soy sauce
- 2 teaspoons dark soy sauce
- 1 teaspoon sugar
- 1/4 teaspoon white pepper
Method
Step 1
Cook noodles based on package instructions. Noodles should be slightly undercooked. Set noodles aside to drain over a colander.
Step 2
Mix ingredients for sauce and set aside in a small bowl.
Step 3
On medium high heat, add 2 tbsps of cooking oil and cook white part of scallions and onions until slightly charred. Remove from heat and set aside.
Step 4
Drizzle the rest of the cooking oil onto pan and add noodles. Using chopsticks, spread noodles out into an even layer and cook for 3-4 minutes. Flip to the other side.
Step 5
Add in green part of scallions and bean sprouts. Mix to incorporate with the noodles.
Step 6
Cook for 2 minutes and add the white part of scallions and onions back into the pan.
Step 7
Pour in prepared sauce and mix well.
Step 8
Drizzle sesame oil to the perimeter of the pan for extra crispness. Continue cooking until desired crispness is achieved.
Step 9
Plate and serve with chili oil (optional).
