A Note from Feedfeed

This no-cook dish is perfect for Summer. Silken tofu is drizzled ssamjang sauce and topped with crunchy cucumbers. Serve over rice for a complete meal.

ingredients

  • 1 block silken tofu
  • 2 tablespoons Persian cucumber, chopped into small cubes
  • Drizzle of sesame oil

Ssamjang sauce

ingredients

  • 1 tablespoon doenjang
  • 1/2 tablespoon gochujang
  • 1 teaspoon minced garlic
  • 1 teaspoon scallions, finely chopped
  • 1/2 tablespoon honey
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sesame seeds
  • 1- 2 tablespoons of water (depending on desired consistency)

Method

  • Step 1

    Open tofu packaging and carefully pour out excess water. Place paper towel on tofu and flip upside down to allow more water to drain out for 5 minutes. When ready, transfer tofu to a plate.

  • Step 2

    Mix all the ingredients for the sauce in a small bowl and set aside. Assembly: Cut tofu into 1/2 inch thickness and fan out. Pour sauce all over and add cucumbers to the top of tofu. Add a drizzle of sesame oil. Serve with rice or as a side dish.
