Extra Fluffy Cinnamon Pancakes

  • 3/4 cups Milk
  • 2 tablespoons Apple Cider Vinegar
  • 1 Egg
  • 1 cup Flour
  • 1 teaspoons Baking Powder
  • 1 teaspoons ground Cinnamon
  • 1 teaspoons ground Nutmeg
  • 1/2 teaspoons Baking Soda
  • 2 tablespoons Maple Syrup or Honey
  • Pinch of Salt
  • for frying Butter or Oil


  • Step 1

    In a glass measuring cup combine the milk and apple cider vinegar and let sit to form a buttermilk type mixture.

  • Step 2

    In a large mixing bowl combine the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.

  • Step 3

    Add the egg and maple syrup (or honey) to the mixing bowl and stir together.

  • Step 4

    Pour in the buttermilk mixture and combine all together to make a pancake batter.

  • Step 5

    Fry up 1/3 cup of batter for each pancake in melted butter in a pan over medium-low heat.

  • Step 6

    Cook for 2-3 minutes on each side until cooked through. Serve hot with maple syrup and whatever toppings you like best!
