Sunny Side Up Eggs With Bacon

Ingredients

4 eggs

olive oil, butter, or fat of choice

1/2 lb of bacon

sea salt

red pepper flakes

toast, for serving

Directions

Fry bacon in a frying pan over medium heat until crisp, or alternatively cook in the oven. To do so, preheat the oven to 400˚F and line a sheet pan with foil and set a metal rack on top. Add the bacon to the rack, then cook in the oven for about 15-20 minutes, or until crisp.  Keep an eye on the bacon after the 10 minute mark to make sure it isn't browning too quickly. 

To cook the eggs, heat a medium sized frying pan over medium heat. Add fat of choice, then add eggs. Let cook until white has set, but yolk is still a bit runny, about 4-5 minutes.

Carefully remove from pan with a spatula. Season with salt and pepper.
