Purple Sweet Potato and Cauliflower Soup

  • 2 tablespoon avocado oil
  • 1 head purple cauliflower
  • 1 large or 2 small purple sweet potatoes
  • 1 yellow onion, chopped
  • 1/4 cup unsweetened almond yogurt
  • 2 cups vegetable broth
  • 1 tablespoon Simply Organic ground cumin
  • 1 radish
  • 1/2 cup dill
  • 1/4 cup roasted chickpeas


  • Step 1

    Chop cauliflower and sweet potato and 1-inch chunks and place on a baking tray. Drizzle with 1 tbsp avocado oil and roast at 375℉ for 30-50 minutes.

  • Step 2

    Sautee onions in 1 tbsp oil until golden brown and translucent.

  • Step 3

    In a high-speed blender, combine cauliflower, sweet potato, onion, almond milk, vegetable broth, cumin, radish, and dill. Blend until thick and creamy.

  • Step 4

    Pour into bowls and top with roasted chickpeas.
