Miso Roasted Eggplant

TO MAKE
Cut eggplant in half and carve as pictured. Make a mix of equal parts shiro miso, mirin, sesame oil and sugar (half part).
Brush eggplant with mix and roast at 200C (400F) for 20-30 mins. depending on size of eggplants.
Drain liquid halfway through roasting and baste some more with paste. Garnish with spring onions and sesame seeds.
